A Vegan Staple: Chickpea CutletsWell, maybe not a staple for all, but we love the Chickpea Cutlets from Veganomicon around here. I don't stick to the recipe exactly (just with some spices and such) and usually mix up what a throw in a little bit, but they always turn out wonderfully.
I also almost always serve them with some roasted russets chopped and seasoned. Also, a quick chicken style gravy on occasion (E likes them with gravy especially).
I've tried them both cooked on the stove top and in the oven and like them both ways. Usually do the stove method for time saving, but the oven's probably a bit healthier.Lilly May likes these nights too because I give her some of the extra smooshed up chickpeas. So really it's a family favorite all-around.

Mmmm yummy. I love that recipe. It is my go to recipe when I haven't got much time to make something.
