Before beginning to eat Vegan I hardly ate any vegetables. I ate some things like canned corn and green beans, some corn on the cob...um...maybe that's it?Even the 4 or 5 years I ate vegetarian before eating vegan I mostly relied on cheesy stuff. It seemed like taking the step to veganism made all the difference.
The past few years I've grown to LOVE vegetables. I love a big salad (used to absolutely hate them), peas, steamed green beans and carrots, avocados, spinach... all sorts of things.
Especially broccoli!

Who would have ever thought? I didn't grow up eating fresh foods and love that as I've gotten older I've started making myself try them in different ways. Through this and my change in diet I've really learned to love my veggies and even crave them sometimes. Not all of them (brussel sprouts I'm lookin at you!) but I'm getting there, and this is a far cry from my childhood eats.
